As you may know, creative, "cute" food is a challenge for me, but I decided to go for it this time.
And here is what I came up with...
In the largest section, I attempted to make a torch. I started with a bed of the dark lettuce leaves from our spring mix. Then I added some red and yellow peppers, along with some carrot shavings (used my peeler for these) to make the flames. The torch portion is a stack of salami.
In the lower left, I have some ranch to dip the veggies in and Olympic rings made from green olive slices (one sunk just a bit).
In the top left section, I have some good ol' U.S. of A. red white and blue fruit mix..... blueberries, blackberries, strawberries and mini marshmallows.
I made this a few days early to make sure I could pull it off and get a photo taken before the blog hop. The kids were at golf camp when I made it and quickly devoured it as soon as they got home! So it's not quite a lunch for my bigger kiddos (12 and 10), but it made a great snack.
