Yesterday we decided it would be great day to spend at the beach. The beach we were going to is pretty isolated, so we needed to pack lunches. Clara and I decided that it was the perfect opportunity to try out a recipe we had pinned on pinterest... antipasto kabobs by The Hungry Housewife. We modified them a bit. We're a family that doesn't do too well when we have too much dairy, so we left off the mozzarella balls and I also forgot to buy black olives, so those are missing as well.
We put them on a bed of baby lettuce and added some fruit (grapes, blueberries and blackberries) and crackers (Triscuit Cracked Black Pepper and Olive Oil).
A perfect lunch for a day at the beach...
The kabobs were easy to eat...
And pretty tasty as well! I would definitely make them again for lunches. I just think I need to find a zestier dressing. The dressing I picked out to marinate the tortellini in just didn't have quite enough zip.

Those antipasto kabobs look soooooo good. We actually had those at a party last month and my girls LOVED them. Great idea putting them in a lunch box!
